Spine Gourd curry / Mada hagala kayi palya


Mada Hagala kayi ( spine gourd in English) was introduced to me by my father in law and he taught me the recipe of Gojju. I have tried making palya  and I fell in love with the taste of it. Its very simple to prepare, but takes little extra time and patience as it has to be cooked in low flame. But taste is worth the effort.


Ingredients
Spine gourd - 1/2 kg
Oil - 4 spoons
Chilli powder - 1/4 spoon
Salt to taste

Method

Wash and cut the spine gourd in to multiple pieces, remove inside portion as shown in picture. Now chop it into fine pieces.

Heat a thick and wide bottomed Kadai. Add 4 spoons of oil. Add chopped spine gourd and roast it in low flame by stirring it frequently. Do not close the lid of the kadai.

It takes about 30 minutes (if you are cooking half kg, time varies depending on the quantity and kadai size) to get roasted properly. After 20 minutes, add salt and chilly powder, mix well and cook further.

Yummy spine gourd curry is ready to serve along with rice, chapati etc.
