Pineapple kayirasa / ananas kayirasa / pineapple curry / ananas curry



While fruits can be eaten raw, some fruits like pineapple can be used to cook tasty curries. Pineapple is one such fruit using which we can cook jam, kayirasa, raita etc. Sharing the recipe of kayirasa - sweet, tangy and spicy dish here.


Ingredients 
Pineapple - 1
Coconut - 1/2 medium sized
Coriander seeds - 4 spoons
Red chillies - 6 to 8
Tamarind - 1 small lemon sized
Jaggery - 4 to 5 spoons
Salt to taste

For tempering
Oil - 3 spoons
Urad dal - 1 spoon
Mustard seeds - 1 spoon
Turmeric powder - 1 pinch

Method
Wash and remove the skin of pineapple gourd. Remove inner hard portion too and chop into medium pieces.

Heat a thick bottomed kadai. Add the oil. When oil gets heated up, add begal gram dal, turmeric powder and mustard seeds. When mustard seeds starts spattering,  add chopped pineapple. Add some water, salt and cook the same by closing the lid. 

Meantime, grate the coconut. Grind coconut, coriander seeds, red chillies along with tamarind water. Please note - coriander seeds and red chillies should not be roasted. 

Add this masala to the Kadai with cooked bitter gourd. Add jaggery and cook for about 10 to 15 minutes. Keep on stirring. More time we cook, tastier it will be.

You can serve this with rice, chapati etc.
