Pumpkin Skin Chutney


Sweet pumpkin also called as Cheeni Kaayi - ಚೀನಿ ಕಾಯಿ, Sihi Kumbala kaayi ಸಿಹಿ ಕುಂಬಳ ಕಾಯಿ  in Kannada is rich in fiber (helps to lose weight :)) and iron. It helps to boost immunity too. We can prepare Roti, Sambar, Idli etc using pumpkin. The skin can be used to prepare Chutney. As we know, vegetable skin is packed with lot of nutrients. So let us stop throwing skin and start cooking. Here is a very simple Chutney recipe for you.

Ingredients
Pumpkin skin - 2 Cups 
Green chillies - 3 to 4
Oil - 2 spoons
Salt to taste

Method
Finely chop the pumpkin skin and green chillies. Heat thick bottomed Kadai and pour the oil. Add green chillies and fry it for a minute. Now add chopped pumpkin skin and keep on stirring under low flame until finely roasted.  

Allow it to cool. Now grind in a mixer grinder by adding salt and little water. Yummy Chutney is ready to eat.
