Whenever I go to new place, I like to surf through the local market to explore the local fruits and vegetables. Recently when I was in Dharwad, I found fresh Safflower (Kusubi) leaves in farmers market. I got the curry recipe recipe from vendor, came back home and prepared. Simple curry tasted so yummy.
Safflower leaves are rich in iron and fiber. Do try it out when you find it next time.
Ingredients
Safflower leaves - 2 bunches
Onions - 3 medium sized
Green chillies - 2 to 3
Green chillies - 2 to 3
Oil - 2 spoons
Mustard seeds - 1/2 spoon
Turmeric powder - 1 pinch
Salt to taste
Method
Finely wash the safflower leaves and chop into small pieces. Chop onions and green chillies into small pieces.
Heat a thick bottomed kadai. Pour oil. When oil gets heated up, add mustard seeds and turmeric powder. When mustard seeds start spattering, add green chillies and roast. After 15 seconds add onions and stir fry for about 30 seconds. Now add chopped safflower leaves, salt and mix well. Close the lid and cook in low flame for about 10 minutes.
This goes well with Chapati, roti, rice etc.
