Delhi carrot also known as Desi carrot is available during winters. They are longer than regular carrots with deep red in color and sweeter too. Halwa using this variety tastes good.
Here is the recipe of tasty carrot curry cooked using ghee, dry fruits and spices.
Ingredients
Desi carrot - 1/2 kg
Grated dry coconut - 2 spoons
Grated dry coconut - 2 spoons
Lemon juice - 1 spoon
Salt to taste
Salt to taste
For tempering
Ghee - 2 spoons
Cashew - 10
Almond - 10
Red chilli powder - 1 spoonMethod
Wash the carrots. Remove the skin and discard. Chop the carrot into fine pieces.
Chop almond and cashew into small pieces.
Heat a thick bottomed Kadai. Add ghee When ghee gets heated up, add chopped almond and cashew.
Roast for 10 seconds. Now add red chilli powder. Mix well.
After 5 seconds, add chopped carrots, salt and mix well. Close the lid and cook in low flame without adding water. Stir frequently so that it does stick to bottom of the kadai.
When it's almost cooked, add lemon juice and grated dry coconut. Mix well.
You can serve thus as a side dish. This can also be eaten as a snack. Adjust the spice level accordingly.
If you like, you can add a pinch of Cinnamon powder too.
