
Moringa / Drumsticks are nutrient-dense vegetable that is rich in vitamins, calcium, iron and essential amino acids. You would have seen or cooked various dishes using drumstick and its leaves. Here is the recipe of drumstick seeds paratha. Ensure to use thick drumsticks with proper seeds (but not overgrown too).
Ingredients
Drum stick - 4 Kg (Cooked drumstick seeds - 1 cup)Wheat flour - 2 cups
Red chilli powder - 1 spoon
Dhaniya Powder - 1 spoon
Garlic cloves - 4 to 5
Ghee - 6 to 8 spoons
Salt to taste
Method
Wash and chop the drumstick into multiple pieces as shown in the photo below. Cook in a pressure cooker for about 2 whistles by adding a cup of water. Allow it to cool down.
Separate out the cooked drumstick seeds, pulp from the skin. Remove the skin of the garlic and prepare garlic paste.
In a broad vessel, add the wheat flour, cooked drumstick seeds and pulp, salt, chilli powder, dhaniya powder and garlic paste. Do not add extra water, drumstick seeds and pulp moisture are good enough. Knead well.
Pull the wheat dough to the size of a big lemon and roll it over using a rolling pin. Spread some wheat flour all over the paratha maker and make the Paratha (can be medium thick).
Heat a thick Tava. Spread ghee on top of it. Now cook the paratha on both the sides by applying little ghee.
