Raw papaya chutney / Parangi kai chutney / Papaya Sambhrao



Raw Papaya Chutney (also known as Palya) is a delightful Gujarati dish I recently had the pleasure of tasting. Simple, flavorful, and incredibly easy to prepare, it quickly became one of my favorites. I’m excited to share this recipe with you all—give it a try and enjoy!

Ingredients

Raw papaya - 1
Green chillies - 3 to 4
Oil - 2 spoons
Mustard seeds - 1 spoon
Curry leaves - 8 to 10
Turmeric powder - 2 pinches
Lemon - 1/2 medium sized
Sugar - 1 spoon (optional)
Salt to taste

Method

Wash and remove the skin of raw papaya. Cut into pieces and remove seeds (if any). Grate the pieces. Chop the green chillies.

Heat a thick bottomed kadai. Add oil. When oil gets heated up, add mustard seeds. When mustard seeds start spattering, add chopped green chillies. After 15 seconds, add curry leaves. After 10 seconds, add grated raw papaya. Mix well and cook for about 10 minutes.

Now add salt and turmeric powder, mix well and cook for another 5 minutes. 

Note:- cooking time depends on the quantity of papaya. Please adjust accordingly.

Add sugar and cook for 2 minutes. Switch of the stove. Add lemon juice and mix well.
