Ripe Bitter gourd panchamrita / Hagala hannina panchamrita


Usage of raw bitter gourd is quite common. Have you ever heard of dishes made out of ripe bitter gourd ?

Recently I had 2 bitter gourds which became ripe in our terrace garden. I recalled the taste of panchamrita which my mother used to make. Called her up, got the recipe, cooked and enjoyed the taste all over again after several years.  Sharing the recipe for you all to try.

Ingredients

Bitter gourd fruit - 2
Tamarind syrup - 1 cup
Jaggery - as per your sweet preference
Salt to taste

For tempering
Oil - 1 spoon
Urad dal - 1/2 spoon
Mustard seeds - 1/4 spoon
Chopped green chillies - 2

Method

Chop and remove the seeds of the ripe bitter gourd.  Mash (or grate) it into paste. Add tamarind juice, jaggery powder, salt.

Heat a tempering spatula. Add oil. When oil gets heated up add, urad dal, mustard seeds. When mustard seeds start spattering, add finely chopped green chillies and cook for 15 seconds. Add this to the other mixture and mix well.

We can serve this with rice.
