Brinjal Dosa / Udupi Gulla dose / Udupi Mattu Gulla dose


Brinjal Dosa is a balanced diet recipe which is made of nutrient rich lentils and fiber and nutrient rich ridge gourd. This is a complete and tasty Dosa which can be served without any extra side dish. Preferably, use Udupi Mattu Gulla (Udupi Brinjal) variety for this dosa.


Ingredients 
1.Rice - 2 cups
2.Bengal gram dal - 2 spoons
3.Toor dal - 2 spoons
4.Mong dal - 2 spoons
5.Roasted fenugreed seeds - 1 spoon
6.Coriander seeds - 2 spoons
7.Red chillies - 6 to 7
8.Grated coconut - 5 to 6 spoons
9.Jaggery - 1 medium lemon sized (optional)
10.Tamarind - 1 medium lemon sized 
11.Asafoetida - 1 pinch
12.Salt to taste
13.Ridge gouard - 1 

Method
Wash rice and soak in water along with ingredients 2 to 5 for about 5 to 6 hours. Grind along with coriander seeds, red chillies, coconut, jaggery and tamarind to make it to thick batter (slightly thicker than Dosa batter). Add salt and Asafoetida and mix well. Keep it overnight to ferment.

If you want crispy Dosa, you can make dose without fermenting the batter. 

Wash and chop the brinjal into thin slices. 

Heat dosa tawa. Apply oil. Soak the sliced brinjal in Dosa batter and place it on the tawa one by one. Cook on both the sides. Hot Ridge gourd Dosa is ready to serve.
