Karchikayi is a unique vegetable which is available in North Karnataka. I spotted this once in Dharwad market few years ago. Later I wanted to buy this vegetable and prepare dishes out of it. I could not find it. Thanks to Uma, my sister-in-law for buying and sending fresh Karchikayi last week.
Karchikayi is typically grown during monsoon season and has several health benefits as per multiple sources. It's good for people with diabetes and also helps regulate blood pleasure, aids strengthening of bones too.
Here is the recipe of Karchikayi palya. It tastes slightly bitter like bitter gourd. But when you spot this vegetable, do not miss to buy and cook the dish out of it.

Ingredients
Karchikayi - 1/2 kg
Karchikayi - 1/2 kg
Onions - 3
Garlic cloves - 8 to 10
Red chilli powder - 1/2 spoon
Salt to taste
Oil - 2 spoons
For tempering
Oil - 3 spoons
Mustard seeds - 1/2 spoon
Turmeric powder - 1 pinch
Curry leaves - 6 to 8
Method
Finely wash the karchikayi and remove the edge towards the stem. Dry them using a cotton cloth.
Chop onions and garlic into small pieces.
Heat a thick bottomed kadai. Add dried karchikayi and roast it for 15 mins by keep on stirring. Add 2 spoons of oil and roast for another 10 mins. If the quantity is less, roasting time also will be lesser. Switch of the stove.
Heat a thick bottomed kadai. Add oil and mustard seeds. When mustard seeds start spattering, add curry leaves, garlic cloves and roast. After 15 seconds add onions and stir fry for about 30 seconds. Now add roasted karchikayi, salt, turmeric powder, red chilli powder mix well. Close the lid and cook for about 5 minutes without adding water. Yummy karchikayi palya is ready to serve.
It goes well with rice.
