Water spinach curry / Kalmi saag curry / Naari saag curry



Water spinach, which is also known as Kalmi saag is another new green leafy vegetable I found in Namma Bengaluru. Explored few recipes from my friends and relatives, tried few of them couple of times. I liked this simple and easy to cook curry which tastes yummy. I am sharing here with the recipe for all of you to try.    

Ingredients

Water spinach leaves - 1 bunch
Onions - 3 medium sized
Green chillies - 2 to 3
Garlic cloves - 8 to 10
Oil - 2 spoons
Salt to taste

Method

Finely wash the water spinach leaves and chop into small pieces. Chop onions, garlic cloves (ensure to remove the outer layer of garlic cloves) and green chillies into small pieces.

Heat a thick bottomed kadai. Pour oil. When oil gets heated up, add green chillies, garlic cloves and roast. After 15 seconds add onions and stir fry for about 30 seconds. Now add chopped water spinach leaves, salt and mix well. Please note, you need not add water as water spinach gets cooked along with its own water content. Close the lid and cook for about 5 to 7 minutes. Switch off the stove.

This curry tastes well with rice.
