Herale kayi saaru / Kanchi kayi saaru / Citron fruit rasam



Herale kayi (also known as Kanchi kayi in Kannada, Citron fruit in English) offers unique taste. You have already seen how to prepare huli (sambar) & thokku. Here is super simple recipe to prepare rasam. This rasam can be served as appetizer too. This rasam is so soothing, you feel like drinking often.

Ingredients

Herale kayi - 1
Jaggery powder - 8 to 10 spoons 
Cumin seeds - 1 spoon
Pepper corns - 8 to 10
Salt to taste

Method

Heat 4 cups of water in a vessel. Add jaggery and bring to boil. 

Roast cumin seeds and pepper corns in a Kadai or tempering spatula till you get aroma. Grind this into fine powder.

Remove the skin of the heralekayi and cut it into half. Squeeze each half and take out the juice. Add this juice and salt onto boiling jaggery water.  Add prepared cumin and pepper powder. Boil for another 5 minutes.

You can serve this as appetizing drink.

If you are going to serve this with rice, you can add tempering of oil, mustard seeds and curry leaves.
