Star fruit jam, Carambola jam, Kamarakshi jam



Star fruit is a sweet and sour fruit. You can either eat it as it is or can cook some dishes and consume. When you have lot of fruits available, you can cook this sweet, spicy and tangy jam / gojju and enjoy eating it for a week or two.

Ingredients

Star fruit - 12 to 15
Jaggery - 1/2 kg
Red chilli powder - 1 spoon


Method
Wash and chop the star fruit into small pieces. Transfer this on to a mixer grinder and grind them without adding water. Separate out the juice and throw away the fibrous part (as shown in the photo below).

Heat a thick bottomed vessel. Add jaggery and 1/4 cup of water. Boil it until think jaggery syrup turn very sticky when you touch it. It should go past single string consistency.  

Now add star fruit juice on to it and boil for 5 minutes. Add red chilly powder and cook for about 10 minutes.

Preserve this jam in a glass jar.

You can serve this with Dosa, chapati etc.
