Drumstick leaves Dosa / Moringa Rosa / Nugge soppina dose


Drumstick leaves (Known as nugge soppu / ನುಗ್ಗೆ ಸೊಪ್ಪು in Kannada) are rich in iron content and suggested to consume for people suffering from iron deficiency. Its popularly known as Moringa these days and being sold in the dried powder form.

Drumstick leaves Dosa is a balanced diet recipe which is made of nutrient rich lentils and drumstick leaves. 

Ingredients 
Rice - 2 cups
Bengal gram dal - 2 spoons
Toor dal - 2 spoons
Moong dal - 2 spoons
Urad dal - 2 spoons
Coriander seeds - 2 spoons
Cumin seeds - 1/2 spoon
Roasted fenugreed seeds - 1 spoon
Red chillies - 10 to 12
Grated coconut - 5 to 6 spoons
Jaggery - 1 medium lemon sized (optional)
Tamarind - 1 medium lemon sized 
Asafotida - 1 pinch
Salt to taste
Drumstick leaves - 3 cups

Method

Wash the rice and soak in water along with Bengal gram dal, toor dal, moong dal, urad dal, and roasted fenugreek seeds for about 5 to 6 hours. 

Remove the stem of the drumstick leaves and separate out the leaves. Wash them cleanly.

Grind the soaked ingredients along with coconut, jaggery, coriander seeds, cumin seeds, red chillies and tamarind to make it to thick batter (slightly thicker than Dosa batter). When the grinding is 75% complete, add the drumstick leaves and grind further so that drumstick leaves become get coarsely ground. 

Add salt and asafotida and mix well. Keep it overnight to ferment.

Heat dosa tawa. Apply oil. Make slightly thick dosa and cook on both the sides. Serve hot dosa with ghee or coconut oil.
