Vadape / Masala Akki Rotti / Southekayi rotti / Cucumber Rotti



Vadape is a malenadu special breakfast recipe.

Ingredients

Rice - 2 cups
Fenugreek seeds - 1 spoon
Coriander seeds  - 1 spoon
Cumin seeds - 1 spoon
Red chillies - 4 to 5
Green chillies - 4 to 5
Cucumber medium sized - 1
Medium sized Onions - 3 to 4
Coriander leaves - one medium sized bunch
Oil - 4 to 5 spoons
Salt to taste

Method
Wash and soak the rice and fenugreek seeds in 2 cups of water for about 8 hours. Chop the cucumber into small pieces. 

Grind the soaked rice & fenugreek seeds along with chopped cucumber, coriander seeds, 1/2 spoon cumin seeds and red chillies into slightly thinner than Dosa batter consistency. 

Heat a thick bottomed Kadai. Add ground batter, salt and cook in medium flame. Keep on stirring. Cook until batter becomes solid. Switch off the stove and allow it to cool down.

Chop onion, coriander leaves and green chillies into small pieces. Add this and 1/2 spoon of cumin seeds into cooked batter and knead well.  

To make the Vadape, if you have banana leaves use it. Otherwise you can use thick plastic sheet. Spread the oil on the plastic sheet using palm. Take tennis ball sized dough and make thin vadape using palm. 

Heat the Chapati / roti tawa and grease it with oil. Transfer the vadape from plastic sheet to tawa using palm. Cook on both the sides. Serve with ghee.
