Sprouted horsegram pongal / Hurali molake kalu pongal / Kulith pongal


Horsegram / Hurali / Kulith  helps to burn fat, prevent kidney stones and also rich source of protein. Price of this lentil is cheaper than toor dal. 

Sprouting of horse gram enhances the bioavailability of nutrients (helps to easily absorb the nutrients by the intestine) . When there are so many benefits, why not we include in our diet ? Sharing here with one of my experiment - sprouted horse gram pongal.

Ingredients

Sprouted horse gram - 2 cups
Rice - 1 cup
Jaggery powder - 1.5 cups
Ghee - 5 spoons
Salt to taste
Grated coconut - 3 to 4 spoons (optional) 

Method

Sprouting - Wash and soak the horse gram in water for 8 hours. After 8 hours, keep it in a hot box for around 8 hours for it to properly sprout. 

Heat a pressure cooker and add 2 spoons of ghee. Add sprouted horse gram and roast it for 2 to 3 minutes. Add rice and roast it for a minute. Add 5 cups of water and close the lid. Pressure cook it for 3 whistles. 

Heat a thick bottomed kadai.  Add jaggery powder and 1/4 cup of water and boil it by keep on stirring until Jaggery thin syrup is formed. 

Now add the cooked Rice and horse gram, salt into the jaggery syrup and cook it in medium flame for about 5 minutes by keep on stirring. Add 3 spoons of ghee and cook for one more minute. Switch of the flame.

Healthy horse gram pongal can be served for breakfast.
