Broken Rice Upma / Akki Nucchina Uppittu



Broken rice Upma (known as ನುಚ್ಚಿನ ಉಪ್ಪಿಟ್ಟು  / Nucchina Upittu in Kannada) is prepared using broken rice (ನುಚ್ಚು / Nucchu). In my native place, my father used to take the paddy grown in our fields to the rice mill and get back three different items from the mill: rice, broken rice and rice husk (known as Thavudu). While broken rice is used to prepare Upma, dosa etc., Thavudu is used to feed the cattle along with warm water in the early mornings. 

Here is the recipe of broken rice Upma. Upma prepared from broken rice of unpolished rice or unpolished / less polished rice tastes yummy and is healthy too. You can replace broken rice with rice to prepare Rice Upma.

Ingredients

Broken rice - 2 cups
Beans - 100 grams
Carrot - 100 grams
Onion - 2 to 3 medium sized
Tomato - 3 to 4 medium sized
Green chilis - 6 to 7
Ginger peace - 1/2 inch
Curry leaves - 10 to 12
Salt to taste
Grated coconut - 5 to 6 spoons

For tempering 
Oil - 4 to 5 spoons
Peanuts - Handful
Bengal gram dal - 1 spoon
Mustard seeds - 1/2 spoon
Turmeric powder - 1 pinch

Method
Wash and finely chop beans, onions, tomatoes and green chillies. Wash and remove the skin of carrots, ginger and finely chop.

Heat a thick bottomed Kadai. Add oil, peanuts, bengal gram dal, mustard seeds and turmeric powder. When mustard seeds stars spattering, add green chillies, after 15 seconds add curry leaves and ginger. Roast it for another 15 seconds. Now add chopped onions and roast it for about a minute. 

Add chopped beans and carrots and cook it for about 4 to 5 minutes without adding water. Add tomatoes and cook for another 2 to 3 minutes. Now add 6 cups of water and salt to taste. Allow the water to boil. When water starts boiling add washed broken rice and close the lid and cook in medium flame for about 10 minutes. Keep stirring occasionally so that contents does not stick to the Kadai. Switch of the flame and add grated coconut and mix well. Serve hot.
