ಹುರಳಿ ಮೊಳಕೆ ಕಾಳು ಪಲ್ಯ / Sprouted Horse gram curry


Horse gram (called as ಹುರುಳಿ ಕಾಳು / Hurali kalu in Kannada) is type of lentil consumed in India. Horse gram is very rich in nutrients. Here is the recipe to prepare sprouted horse gram curry (for horse gram Rasam recipe, click here). 

Ingredients 
Sprouted horse gram - 2 cups
Oil - 2 spoons
Bengal gram dal - 1 spoon
Mustard seeds - 1/2 spoon
Turmeric powder - 1 pinch
Asafoetida - 1 pinch
Onions - 2 medium sized
Green chillies - 3 to 4
Curry leaves - 6 to 8
Grated Jaggery - 2 spoons (optional)
Lemon - 1/2 medium sized
Grated coconut - 2 spoons
Salt to taste

Method

Sprouting - Wash and soak the horse gram in water for 8 hours and keep it inside hot box overnight. Wash it once and keep it again in hotbox for another 8 hours for it to sprout properly. 

Wash and cook the sprouted horse gram along with 2 cups of water in a pressure cooker.

Only the pressure cooker cools down, separate out the cooked water from the sprouted horse gram (cooked water can be used to prepare Rasam. For recipe, click here).

Chop onions and green chillies into fine pieces.

Heat a thick bottomed Kadai.  Add the oil, bengal gram dal After 10 seconds, add mustard seeds, turmeric powder, asafoetida. When mustard seeds start spattering, add green chillies, curry leaves (i did not add since it was out of stock at home...) and stir it for a while. Now add chopped onions and when onions turn golden brown, add cooked horse gram. Add salt, jaggery (optional) and lemon juice, grated coconut and cook for about 5 minutes.

Healthy dish is ready to serve as a side dish for Chapati / rice. Or even we can serve as evening snack.
