Peas Capsicum Rice


I love to cook one yummy balanced diet recipe with both lentils and vegetables on lazy days rather than cooking 2-3 separate dishes. Here is one such healthy recipe cooked with fresh peas and capsicum.

Ingredients
Fresh Peas - 1/2 Kg
Capsicum - 1/2 kg
Salt to taste
Rice - 1 cup
Tamarind - 1 medium lemon sized

For tempering
Oil - 3 to 4 spoons (i use less oil usually)
Bengal gram dal - 1 spoon
Mustard seeds - 1/2 spoon
Turmeric powder - 1 pinch
Curry leaves - 5 to 6

For Masala
Bengalgram dal - 1.5 spoons
Urad dal - 1.5 spoons
Coriander seeds - 3 spoons
Cinnamon - 1/2 inch
Cloves - 2
Red chillies - 6 to 8 depending on spice level
Grated dry coconut - 4 to 5 spoons


Method
Cook 1 cup of rice and allow it to cool. To avoid the rice sticking to each other, we can add 1/4 spoon of oil while rice is getting cooked.


Let us use the fresh peas for better teaste.. Separate out the peas from its cover, wash the same.

Wash and cut the capsicum into 3 to 4 pieces and remove the seeds. Chop the same into fine pieces. You can use a chopper to cut the capsicum as shown in the video to chop it fast (Note - this chopper can also be used to chop onion, tomato, Aloo, carrot, beetroot etc.).

















Roast the masala ingredients except dry coconut using 1/2 spoon oil for about 2-3 minutes. Add grated dry coconut and roast it for 30 seconds. Allow it to cool and make the powder using a mixer grinder. 

Soak the tamarind in hot water for 5 minutes an separate out the juice.






















Heat a thick bottomed Kadai. Pour oil, bengal gram, mustard seeds and turmeric powder. When mustard seeds starts spattering, add curry leaves. Cook for 30 seconds and then add peas. Cook for about 10 minutes without adding water. Now add chopped capsicum and salt and cook for about 10 mins. Do not add water, and stir occassionally.

Now add tamarind juice and ground masala powder and mix well and cook for about 2-3 minutes. Allow this masala to cool down.

Add this masala to the cooked rice and mix well. Yummy capsicum peace balanced meal is ready to serve.
