ತಿಳಿ ಸಾರು / ಗಂಜಿ ಸಾರು / Thili Saru


Our ancestors always knew the ways to cook with whatever items available at home, especially when they are short of vegetables. Here is one such dish prepared with minimum ingredients and rice water. Its called Thili saru. It has cooling effect on the body. 

Ingredients
Rice - 2 cups
Onion - 2
Coriander leaves - 1 small bunch
Curd / butter milk - 1/2 cup
Lemon - 1/2 (medium sized)
Salt to taste

For tempering
Oil - 2 spoons
Urad dal - 1 spoon
Mustard seeds - 1/2 spoon
Asafotida - 1 pinch
Green chillies - 3 to 4

Method

In a vessel boil 10 cups of water. Wash the rice and add to the boiling water. Let the rice gets cooked. It takes about 20 to 25 minutes to cook. Once rice is cooked, separate out the rice water (its called Thili in Kannada). 

Chop the onions, chillies and coriander leaves and keep it aside.

Heat the a small vessel (preferably iron vessel). Add oil, urad dal, mustard seeds, asafotida. When mustard seeds starts spattering, add chopped green chillies and cook for 30 seconds. Switch off the flame.

Now add curd (or butter milk) to the Thili. Add salt, chopped onions, coriander leaves, lemon juice and the above tempering masala. Mix well. 

This can be served with rice.
