Ridge gourd Dosa / Herekayi dose / Here kayi dosa


Ridge gourd (known as ಹೀರೆಕಾಯಿ (Here kayi) in Kannada) Dosa is a balanced diet recipe which is made of nutrient rich lentils and fiber and nutrient rich ridge gourd. This is a complete and tasty Dosa which can be served without any extra side dish.

Ingredients 
1.Rice - 2 cups
2.Bengal gram dal - 2 spoons
3.Toor dal - 2 spoons
4.Mong dal - 2 spoons
5.Coriander seeds - 2 spoons
6.Roasted fenugreed seeds - 1 spoon
7.Red chillies - 6 to 7
8.Grated coconut - 5 to 6 spoons
9.Jaggery - 1 medium lemon sized (optional)
10.Tamarind - 1 medium lemon sized 
11.Asafotida - 1 pinch
12.Salt to taste
13.Ridge gouard - 1 

Method
Wash rice and soak in water along with ingredients 2 to 7 for about 5 to 6 hours. Grind along with coconut, jaggery and tamarind to make it to thick batter (slightly thicker than Dosa batter). Add salt and asafotida and mix well. Keep it overnight to ferment.

Wash and remove the edges of the ridge gourd. Slice it into round thin pieces. 

Heat dosa tawa. Apply oil. Soak the sliced ridge gourd in Dosa batter and place it on the tawa one by one. Cook on both the sides. Hot Ridge gourd Dosa is ready to serve...Try it out and leave a comment..
