Sweet potato basundi / Genasina basundi



Sweet Potatoes (called as ಗೆಣಸು / Genasu in Kannada) are high in fiber, vitamins and minerals. It is rich in vitamin C which helps to improve immunity and rich in vitamin D which helps to build healthy bones. Here is a desert recipe for you to try.

Ingredients

Milk - 6 cups
Sweet potato - 1/4 kg
Sugar - 1 cup
Cardamom powder - 1/4 spoon
Ghee - 1 spoon
Cashew nuts - 5 to 6

Method
Boil cups of milk in a vessel. Keep on stirring. Boil it till milk reduces to half the quantity. 

Peel off skin of sweet potato and grate it. Now add this to the milk and cook it for about 15 minutes.

Note:- Peel off the skin and grate the sweet potato when you are just about to add it to milk. Otherwise Sweet potato's color changes to dark brown.

Add sugar and cardamom and cook it for about 5-6 minutes. 

Roast the cashews in ghee and add it to the Basundi.

Yummy, healthy desert is ready. It tastes awesome when it is served cold.
