Dried Coconut Butter


As i have written earlier, every recipe has some attached story to tell/recall. When i visited my relatives house in Siddapur last year - knowing my interest in cooking, Shantha Atte specifically made this coconut Chutney powder (i am calling it coconut butter:)) for me. I loved this simple and yummy dish. Sharing it with you all.

Method

Use finely grown and dried coconut. Scrape the outer layer of the coconut. Chop it into small pieces. 

Heat a thick bottomed Kadai. Add chopped coconut. Roast it using low flame till it turns golden brown. It takes about 15 minutes to roast. Switch off the flame and allow it to cool down.

Grind the same in mixer jar (small jar in which we use to make powders) it the oil stars leaving from the coconut. 

Store it in a container. This can be stored and use for about 2 weeks. Please do not store this in fridge.

To enhance the taste and also to increase the quantity, you can also add urad dal powder, bengal gram dal powder etc (roasted & powdered).

We can eat this with Chapati, Dosa. Taste well with rice along with ghee too.
