Vitamin leaves Chutney / Chakramuni soppina chutney


Vitamin leaves (ಚಕ್ರಮುನಿ ಸೊಪ್ಪು in Kannada) are as the name suggest contains multi vitamins - A, B, C & K. You may not find these leaves in the market. But its pretty easy to grow (can grow in the pots too). You can try planting one. 
We can cook Thambuli, Chutney from these leaves. Here is the recipe of Chutney.

Ingredients

Vitamin leaves / ಚಕ್ರಮುನಿ ಸೊಪ್ಪು - a large sized bunch
Garlic cloves - around 15
Green Chillies - 10
Tamarind - medium lemon sized
Salt to taste 

For Seasoning
Oil - 2 spoons
Red chilli - 1
Urad dal - 1 spoon
Mustard seeds - 1 spoon

Method

Finely wash the vitamin leaves and chop it. Heat a thick bottomed Kadai and fry it for 3-4 minutes until water in the leaves vaporizes.  Allow it to cool. 
Grind vitamin leaves with all other ingredients in a mixer grinder without adding water into fine paste. 

Heat a thick bottomed Kadai. Add oil, red chilli, urad dal and finally mustard seeds. When mustard seeds starts spattering, add the ground paste and cook on low flame for about 5 minutes. Yummy chutney is ready to be served with Dosa, Idli, rice, Chapati etc. This chutney can be stored without refrigerating for up to a week.
