Puffed rice Upma / Susla / Mandakki uppittu





To me, every recipe has an associated story, some friends/relatives/restaurant connect with it. Puffed rice Upma is no exception to this.

When me and my family went to visit my colleague's house to meet their newborn baby a few years ago, we got to taste fresh the yummy north Karnataka style puffed rice Upma / Mandalli Upma / Susla. . 

I was happy to know this easy recipe, and I added to the list of break fast items.

Ingredients

Puffed rice - 150 Grams
Onion - 2 medium sized
Tomato - 2 medium sized
Roasted peanut powder - 3 spoons
Green chilies - 4
Coriander leaves - 1 small bunch
Salt to taste


For Seasoning

Oil - 2 spoons
Bengal gram - 1 spoon
Mustard seeds - 1 spoon
Turmeric powder - 1/6 spoon

Method

Finely chop onions, tomato, green chilies & coriander leaves and keep it aside.

Heat a thick bottomed Kadai. Add oil, Bengal gram, and after 15 seconds add mustard and turmeric powder. When the mustard seeds start spattering, add chopped green chilies. After 15 seconds, add chopped onions and keep stirring. When the onions turn translucent, add cut tomatoes and keep stirring for about a minute. 

Pour water into a big vessel. Soak the puffed rice for about 30 seconds and squeeze out the water and put it into the Kadai. 

Please note that you will have to soak puffed rice little by little, if you leave puffed rice in water for more time, it will become too soft.

Add roasted peanut powder, salt and chopped coriander leaves, and mix well. Cook this for about 3-4 minutes in medium flame.

Your yummy and easy-to-prepare puffed rice Upma is ready to serve.
