Mangalore Buns (Wheat Flour & Banana Puri)


Mangalore Buns is a type of breakfast and snack item belonging to the Mangalore - Udupi region.

In our office Kamath food court, we get this for snacks on every Thursday. My friend and I cherish this yummy snack once in a while.


Couple of years back, I was checking with my Mangalorean friend Nalini for the recipe and she got it from her mother. I tweaked it a bit to replace Maida/all purpose flour with wheat flour and started preparing this for breakfast at home. My whole family loves this. 
Here is the recipe for you. Please try it out and share your feedback.

Ingredients


Wheat Flour - 4 Cups
Curd - 1 Cup
Sugar - 1/2 Cup
Banana - 4
Saunf - 1/2 spoon (optional)
Salt to taste
Baking Soda - 1 Pinch
Ghee - 2 Spoons
Oil - 1/2 Litre

Method

Remove the skin of the Bananas (I use riped Robasta Banana (ಪಚ್ಚ್ ಬಾಳೆ) which are long ones, if you are using Elakki Banana use 6 to 8) and squash them. Add all other ingredients except ghee & oil and knead very well. Now add ghee and knead further for about 2 to 3 minutes. Keep it aside for about 5-6 hours or overnight.

In a thick bottomed Kadai, heat the oil.

Take dough the size of a big lemon and roll-out to form Buns similar to a thick Poori on the rolling-board. Take a round shaped box / plate and press on the Poori so that shape will be round and consistent for all Buns.

Transfer it on to the oil in the Kadai and cook both the sides and take it out.

Yummy Mangalore Buns are now ready to serve. It can be eaten as it is or can be served with Chutney.
