Vermicelli Beetroot Upma / Uppittu



Ingredients

Vermicelli - 1 cup
Beetroot - 2 medium sized
Sprouted /overnight soaked green moong dal - 1/2 cup
Onion - 2 medium sized
Green chillies - 4
Grated coconut - 2 spoons
Lemon - 1/2
Water - 3 cups
Salt to taste

For seasoning - Oil, Bengal gram dalm, urad dal, mustard, turmeric and Curry leaves

Method

Roast the vermicelli in a kadai in low flame till it turns golden brown color. Keep it aside.

Heat the kadai and add oil. When the oil is heated, add bengral gram, urad dal, mustard and turmeric. When the mustard starts spattering, add green chillies and curry leaves. Fry for 15 seconds and then add onion.
Roast the onion till it turns golden brown.
Add sprouted moong dal (if you don't have time to sprout it, can added the moong dal soaked for 5-6 hours) and chopped beetroot. 
Fry it for 4 to 5 minutes, add water and salt. Let the water boil.
Now add roasted vermicelli and cook it in low flame till the water goes off completely.

Finally add lemon juice and grated coconut and mix well. If you like sweet, can add a spoon of sugar as well.

Beetroot is a good remedy for constipation. Upma having pulse and vegetables, it becomes an easy option to follow balanced diet.
