Phirni / Rice pudding

While there many receipes of Phirni are available on the net, here is one of the easy recipe.

 

 
Ingredients

Milk - 1/2 litre
Rice - 1/4 cup Basmati/ jeera rice
Sugar - 1/4 cup sugar
Badam - 25
Cardamom - 2
Turmeric - 1/4 tea spoon (optional - I add it) / you can use kesar  
Cashew/Pista/Raisin/pomegranate for garnishing 

Method

Soak the rice for about 2-3 hours and grind it into fine paste by adding water. 
Add this paste, turmeric into the not yet boiled milk in a thick bottomed Kadai and mix well.

Now heat the Kadai in a medium heat for about 5 minutes. Continuously stir it so that no lumps are formed.

Now add cardamom powder and sugar and cook on low flame for about 5-7 minutes and switch off the flame.

Soak the badam overnight and grind into a fine paste. Add the paste into the cooked Phirni and mix well.

Add Phirni into small mud pots and then you can garnish Phirni with cashew/pista/raisin/pomegranate as you wish.
