Ash Gourd Skin Chutney / Budu kumbalakayi sippe chutney

 
Ash Gourd (ಬೂದುಗುಂಬಳ ಕಾಯಿ) is a vegetable used for various dishes. This recipe is based on the left out skin from the Ash gourd

 
Ingredients

Finely Chopped Ash Gourd Skin - 1 Cup
Green chillies - 4
Grated coconut - 1/2 cup
Oil – 3 to 4 spoons
Tamarind – 1 small ball
Salt to taste
Asafoetida  to taste

Method

Cut the ash gourd skin into small pieces.
Cut the chillies into slices.
In a thick bottomed Kadai, add the oil. Once the oil heats up, add the chopped chilies. After 30 seconds add pieces of ash gourd skin and roast it in low flame for about 15-20 minutes or till it becomes pretty crispy.
Roasting time depends on the size of the tawa and the quantity of ash guard skin you are considering. 
Keep stirring occasionally so that it will not stick to the bottom of the pan.
Let the roasted ingredients cool down.
Grind with all the ingredients.
You can add seasoning if you want it to taste better (not mandatory).
