Tender coconut payasam / Elaneer payasa



Lunch time conversations have begun again in office with offices opening up. Very recently I got to know this tender coconut payasam recipe from my friend Gayathri Ravi. Prepared couple of time since then and loving it especially in this summer weather.

Ingredients

Condensed milk - 1/2 cup 
Coconut milk - 1 cup
Tender coconut water - 1 cup
Chopped tender coconut - 3 to 4 spoons

Method

For condensed milk, either you use milkmaid or you can boil the milk till it becomes one forth. If you are preparing condensed milk at home, add 4 to 5 spoons of sugar to the payasam.

Grate and grind half medium sized coconut by adding a cup of water. Stain using the stainer and separate out the milk. 

Cut a bit thick tender coconut and take out the water. Chop the tender coconut into small pieces.

Mix condensed milk, sugar (if you have prepared condensed milk at home), coconut milk, tender coconut water and chopped tender coconut. Mix well and keep it in the fridge for over 2 hours. It tasty very nice when it is cold.
