Water leaf dosa / Nelabasale dosa / Talinum fruticosum dosa


Water leaf (known as nela basale in Kannada) is a commonly and easily grown vegetable in the malenadu region in Karnataka where I have grown up. My mother used to prepare Dosa, Sasive, Sambar using Nela basale. Here is the recipe of highly nutritious and tasty Nela basale Dosa recipe. 

Ingredients 

1. Rice - 2 cups
2. Bengal gram dal - 2 spoons
3. Toor dal - 2 spoons
4. Mong dal - 2 spoons
5. Coriander seeds - 2 spoons
6. Roasted fenugreek seeds - 1 spoon
7. Red chillies - 8 to 10
8. Grated coconut - 5 to 6 spoons
9. Jaggery - 1 medium lemon sized (optional)
10. Tamarind - 1 medium lemon sized 
11. Asafoetida - 1 pinch
12. Salt to taste
13. Water leaf - 1 medium bunch
14. Onion - 2 medium sized

Method

Wash rice and soak in water along with ingredients 2 to 7 for about 5 to 6 hours. Grind along with coconut, jaggery and tamarind to make it to thick batter (slightly thicker than Dosa batter consistency). Add salt and asafoetida and mix well. Keep it overnight to ferment.

Wash and chop the water leaf into fine pieces. You can keep aside the thick stem and use that for sambar. Chop the onions as well into fine pieces. Add chopped water leaf and onions to dosa batter next morning.

Heat dosa tawa. Apply oil. Prepare dosa. Cook on both the sides.


Nutritious water leaf dosa is ready to serve.
