Aloe vera curry / aloe vera sabji / lole sara palya

Ingredients

Aloe vera -  5 to 6 leaves 
Turmeric Powder - 1 pinch
Red Chilli powder - 1 spoon
Oil - 3 spoons
Cumin Seeds / Jeera - 1/4 spoon
Asafoetida - 1 pinch
Sugar - 1/2 spoon
Curd - 3 spoons
Raisins - 2 spoons

Method


Wash and remove the sides of aloe vera stem so as to remove the thorns / sharp edgesCut this into small pieces and cook in a pressure cooker along with a cup of water for 2 whistles. 

Once the cooker cools down, remove the water and wash the cooked aloe vera with ice cold water.

Heat a kadai. Add oil, cumin seeds, turmeric powder and asafotida.
When cumin seeds start spattering, add boiled aloe vera, salt and cook for 2 minutes. 

Now add curd, raisins and sugar and cook for another 2 minutes. Add red chilly powder and cook for 2 more minutes. Serve hot.

This goes well with rice. 

Note:- Eat in moderation as some people may diarrhea due to its laxative effects.

There are many types of aloe vera. Some varieties are bitter in taste, so not advisable to consume. Fresh ones with dark green color, having shiny transparent jel inside has to be used to prepare this curry. Taste the inside gel to see if the aloe vera is bitter.
