Rice & Kusubi milk huggi / Rice and safflower milk huggi




Kusubi beeja or Safflower seeds are the vegetable oil seeds. It is widely grown and sold in north Karnataka. 

When I visit my sister in law's place in Dharwad, I love to go to grocery market there due to variety of pulses and other groceries we get there. Kusubi seeds are also sold there. Many lady shop keepers will be selling these items. When I found Kusubi, I chatted with the lady shop keeper and got the Kusubi sweet huggi recipe. I tweaked a bit to add basamati rice instead of normal rice. You can also replace jaggery by mashed chillies and garlic.

Ingredients

Basmati Rice - 1 cup
Kusabi / Safflower seeds - 1 cup
Jaggery powder - 1.5 cups
Salt to taste

Method
Soak safflower seeds overnight or 8 to 10 hours. 

Cook basmati rice adding 2 cups of water in a pressure cooker. 

Finely grind the soaked safflower seeds using 2 cups of water. Filter the same using a thin muslin cloth and separate out the milk.

Heat a thick bottomed kadai. Add 1.5 cups of jaggery powder and 1/4 cup of water. Let the jaggery melt completely. Now add cooked rice, salt to taste and mix properly. Add safflower seeds milk and cook for 3-4 minutes. 

Serve hot.
