Herale kayi thokku / Kanchi kayi thokku / Citron fruit thokku



Herale kayi (also known as kanchi kayi (ಕಂಚಿ ಕಾಯಿ) in Kannada, citron fruit in English) offers unique taste for which some people like me fall in love with it. 

You have already seen how to prepare herale kayi huli. Here is the recipe of herale kayi thokku. You can serve this with chapati, dosa or even use like pickle.

Ingredients
Herale kayi - 2
Cumin seeds - 1 spoon
Salt to taste
Red chillies - 6 to 12 
Pepper corns - 5 to 6
Tamarind - 1 spoon lemon sized ball
Jaggery powder - 5 to 6 spoons
Oil - 4 spoons
Mustard seeds - 1/2 spoon
Turmeric powder - 1 pinch

Method
Wash and grate the herale kayi using a grater. Separate out the seeds. 

Roast red chillies, pepper corns and cumin seeds separately and powder the same using a mixer grinder. This is your masala.

Heat a thick-bottomed kadai. Add oil, mustard seeds, turmeric powder. When the  mustard seeds start spattering, add the grated herale kayi, salt and cook for about 5 minutes. Now add powdered masala, jaggery, tamarind juice, mix well and cook for about 3-4 minutes. Your yummy herale kayi thokku is ready to serve.

This can be used for about 15 days without refrigeration.
