Ladies finger paldya / Bhendi paldya

Here is the recipe of Udupi style ladies finger paldya (also known as Bhende kayi Paldya / Bhendi paldya).

Ingredients

Ladies finger - 1/4 kg
Fenugreek seeds - 2 spoons
Red chillies - 8 to 10
Jaggery - 8 to 10 spoons
Grated coconut - 1/2 cup
Tamarind - 1/2 small lemon sized
Salt to taste
Oil - 1/2 spoon

Method

Wash and remove the sides of the ladies finger and chop into pieces as shown in the photo.  Cook in a vessel along with water, tamarind juice and salt. Ensure that its not over cooked.

Roast red chillies and fenugreek seeds seperately with little oil. Grind this along with grated coconut and jaggery. Add this masala to the cooked ladies finger and boil for about 5-6 minutes.

Optionally we can add tempering with oil and mustard seeds.

Yummy Paldya is ready to serve.
