Aralu Uppittu / Puffed paddy Upma



Puffed paddy is known as Aralu in Kannada used to be one of the very common breakfast / dinner ingredients in my childhood. My mother used to prepare aralu at home by roasting the paddy.

Here is the recipe of very easy to prepare Aralu Uppittu / Upma.

Ingredients

Aralu - 150 Grams
Onion - 2 medium sized
Tomato - 2 medium sized
Capsicum - 2 medium sized
Green chilies - 4
Coriander leaves - 1 small bunch
Salt to taste
Grated coconut - 2 spoons

For Seasoning

Oil - 2 spoons
Peanuts - 10 to 12
Bengal gram - 1 spoon
Mustard seeds - 1 spoon
Turmeric powder - 1/6 spoon

Method

Finely chop onions, capsicum, tomato, green chilies & coriander leaves and keep it aside.

Heat a thick bottomed Kadai. Add oil, peanuts, Bengal gram, and after 15 seconds add mustard seeds and turmeric powder. When the mustard seeds start spattering, add chopped green chilies. After 15 seconds, add chopped onions, capsicum and keep stirring. When the onions turn translucent, add cut tomatoes and keep stirring for about a minute. 

In a big vessel add water to half of the level. Soak the aralu for about 10 seconds and squeeze out the water and put it into the Kadai. 

Please note that you will have to soak aralu little by little, if you leave puffed rice in water for more time, it will become too soft.

Add salt and chopped coriander leaves, grated coconut and mix well. Cook this for about 3-4 minutes in medium flame.

Your yummy and easy-to-prepare aralu rice Upma is ready to serve.
