Upma can be made delicious by preparing it with brinjal. Here is the rava vangi bath recipe.
Ingredients
Bansi Rava - 1 Cup
Brinjal (Vangi) - 1/4 kg
Tamarind - 1 small lemon sized
Salt to taste
Coriander leaves - 1 small bunch
Grated coconut - 4 spoons
For Masala
Urad dal - 2 spoons
Bengal gram dal - 2 spoons
Red chillies - 5 to 6
Clove - 1
Cinnamon - 1 small piece
Dried curry leaves - 5 to 6
For tempering
Oil - 3 spoons
Peanuts - fist full
Bengal gram dal - 1 spoon
Mustard seeds - 1/2 spoon
Turmeric powder - 1 pinch
Method
Wash and chop brinjal into small pieces.
Roast the bansi rava in thick bottomed kadai.
Now roast items listed for masala and grind the same into powder using mixer grinder.
Heat a thick bottomed kadai. Add oil, peanuts, bengal gram dal, mustard seeds, turmeric powder. When mustard seeds starts spattering, add chopped brinjal. Mix well, close the lid and cook for about 5 minutes. Now add 3 cups of water, salt, tamarind juice and allow the water to boil. Add the masala powder on to the boiling water.
Now add roasted bansi rava, mix well and close the lid and cook for about 5 minutes. Switch off the flame.
Add copped coriander leaves and grated coconut and mix well. Optionally can add a spoon of sugar too.
